Easy Pasta & Meatballs

Here's a quick and delicious recipe for a midweek dinner:

Ingredients:
1 pack Yarra Valley Angus Beef Meatballs
1 jar Enzo's Assisi Pasta Sauce
1 pack Pangkarra Wholegrain Linguine
1 cup water (or red wine)
1 tablespoon olive oil
1 clove of garlic, crushed
1 brown onion, roughly chopped
250g mushrooms, halved and sliced
1 carrot, peeled and finely chopped
1/2 cup fresh basil, roughly chopped
1/2 cup finely grated Edwards Crossing Romano cheese (optional)
 

Method:

1.  Heat oil in frying pan over medium/high heat. Lightly sear the meatballs (4 minutes, turning after 2), then transfer to a bowl

2. Reduce heat to medium/low. Add onion and garlic to pan and fry until just softened. Add carrots and mushrooms and fry until mushrooms leach their water.

3.Add pasta sauce and water (or wine) to the pan and bring to boil. Add meatballs back into the pan, reduce the heat and simmer for 10 minutes.

4. Prepare the linguine as per the instructions on the pack.

5. Stir fresh basil through meatballs and sauce. Season to taste.

6. Combine the pasta with the meatballs and sauce. Serve immediately, sprinkled with grated Romano or Parmesan cheese. Garnish with basil leaves.

Serves 4

– 8-9 Carrots
– 250g mushrooms
– Over 3/4 of a garlic bulb
– 3-4 Brown onions
– Half bunch of basil
